  • For the Chocolate Glaze:
  • 2 cups powdered sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup whole milk warmed
  • 1 tsp vanilla extract
  • Pinch of salt

Equipment

  • Equipment:
  • Mixing bowls
  • Measuring cups and spoons
  • Stand mixer with dough hook (optional)
  • Rolling Pin
  • Doughnut cutter or round cutters
  • Baking sheet or tray
  • Large pot for frying
  • Candy thermometer
  • Cooling rack
  • Saucepan (for glaze)

Method

  1. Instructions:
  2. Activate Yeast:
  3. In a bowl, combine warm water, yeast, and a pinch of sugar. Let it sit for 5–10 minutes until foamy.
  4. Mix Dough:
  5. In a large mixing bowl, combine sugar, evaporated milk, melted butter, egg, and salt. Add yeast mixture. Gradually stir in the flour until a soft dough forms.
  6. Knead & Rise:
  7. Knead for 8–10 minutes (or use a stand mixer with a dough hook for 5 minutes). Place the dough in an oiled bowl, cover with a towel, and let rise for 1–1.5 hours, or until doubled in size.
  8. Shape Doughnuts:
  9. Roll the dough to about 1/2-inch thickness. Cut out doughnuts using a doughnut cutter or two round cutters. Place on a floured tray, cover, and let rise again for 30 minutes.
  10. Fry:
  11. Heat oil in a large pot to 350°F (175°C). Fry the doughnuts 1–2 minutes per side until golden brown. Drain on paper towels.
  12. Make Chocolate Glaze:
  13. In a saucepan over low heat, whisk together cocoa powder, powdered sugar, salt, vanilla, and warm milk until smooth.
  14. Glaze Doughnuts:
  15. Dip warm doughnuts into the chocolate glaze and set on a wire rack to allow the glaze to set.

Notes

Notes:
For an extra shine, double-dip the doughnuts in the glaze once the first layer sets.
These are best enjoyed the same day.
You can reheat in the microwave for 10 seconds to revive the texture.
Let the dough rise in a warm, draft-free area to ensure fluffiness.
