- Activate Yeast:
- In a bowl, combine warm water, yeast, and a pinch of sugar. Let it sit for 5–10 minutes until foamy.
- Mix Dough:
- In a large mixing bowl, combine sugar, evaporated milk, melted butter, egg, and salt. Add yeast mixture. Gradually stir in the flour until a soft dough forms.
- Knead & Rise:
- Knead for 8–10 minutes (or use a stand mixer with a dough hook for 5 minutes). Place the dough in an oiled bowl, cover with a towel, and let rise for 1–1.5 hours, or until doubled in size.
- Shape Doughnuts:
- Roll the dough to about 1/2-inch thickness. Cut out doughnuts using a doughnut cutter or two round cutters. Place on a floured tray, cover, and let rise again for 30 minutes.
- Fry:
- Heat oil in a large pot to 350°F (175°C). Fry the doughnuts 1–2 minutes per side until golden brown. Drain on paper towels.
- Make Chocolate Glaze:
- In a saucepan over low heat, whisk together cocoa powder, powdered sugar, salt, vanilla, and warm milk until smooth.
- Glaze Doughnuts:
- Dip warm doughnuts into the chocolate glaze and set on a wire rack to allow the glaze to set.
