Ingredients
  

  • 2 lbs boneless skinless chicken thighs
  • 2 –3 chipotle peppers in adobo + 1 tbsp adobo sauce
  • 4 garlic cloves minced
  • 3 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tbsp honey optional
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp black pepper

Equipment

  • Large mixing bowl or resealable bag
  • Grill or oven
  • Tongs
  • Meat thermometer (optional but recommended)

Method
 

  1. Prepare the Marinade: In a blender or food processor, combine chipotle peppers, adobo sauce, garlic, olive oil, lime juice, honey, paprika, cumin, salt, and pepper. Blend until smooth.
  2. Marinate the Chicken: Pour the marinade over the chicken thighs in a bowl or bag. Mix well to coat. Marinate for at least 1 hour (overnight preferred).
  3. Grill or Bake:
  4. Grill: Preheat grill to medium-high. Cook 5–7 minutes per side, or until internal temp reaches 165°F.
  5. Bake: Preheat oven to 425°F. Bake on a sheet for 20–25 minutes. Broil last 2–3 mins for a crispy char.
  6. Rest and Serve: Let chicken rest for 5–10 minutes, then slice and serve in tacos, bowls, salads, or wraps.

Notes

Adjust spice level by using fewer chipotle peppers.
Use chicken breasts if preferred, but watch for overcooking.
Store leftovers in the fridge for up to 5 days or freeze for 3 months.
