  • Vegetable oil for frying
  • 1 cup raspberry or strawberry jam or other preferred filling

Method

  2. In a small bowl, dissolve yeast in the warm milk and let sit for 5 minutes until foamy.
  3. In a stand mixer bowl, combine flour, sugar, salt, eggs, vanilla, and softened butter. Add the yeast mixture and knead until a smooth dough forms, about 5–7 minutes.
  4. Cover the bowl with a towel and let the dough rise until doubled, about 1–2 hours.
  5. Punch down the dough, roll out to about 1/2 inch thick, and cut rounds with a donut cutter or biscuit cutter.
  6. Place on a lined baking sheet and let rise again for 30–45 minutes until puffy.
  7. Heat oil to 350°F (175°C) in a deep fryer or large pot.
  8. Fry each donut for about 1–2 minutes per side until golden brown.
  9. Drain on a cooling rack lined with paper towels.
  10. Once slightly cooled, fill with jam using a piping bag.
  11. Dust with powdered sugar and serve warm.

You can use other fillings such as custard, lemon curd, or chocolate cream.
For best results, use a thermometer to keep the frying oil temperature stable.
Store any leftover donuts in an airtight container for up to 2 days.
