  • 2 tbsp sugar
  • 1 tsp salt
  • ¾ cup warm milk
  • 2 eggs
  • 4 tbsp melted butter
  • For the custard filling:
  • 2 cups whole milk
  • 4 egg yolks
  • cup sugar
  • 3 tbsp cornstarch
  • 1 tsp vanilla extract
  • pinch of salt
  • For the chocolate glaze:
  • 4 oz semi-sweet chocolate
  • ¼ cup heavy cream
  • 1 tbsp butter

Method
 

  1. Instructions:
  2. In a stand mixer, combine flour, yeast, sugar, salt, warm milk, eggs, and melted butter. Knead until smooth. Let rise 1–2 hours until doubled.
  3. Roll out dough to about ½-inch thickness, cut rounds, and rest for 30 minutes.
  4. Heat oil to 350°F and fry each donut 2 minutes per side until golden brown. Drain on a wire rack.
  5. For the custard, warm the milk, then whisk egg yolks, sugar, and cornstarch in a bowl. Temper with warm milk, return to heat, and stir until thick. Add vanilla and chill.
  6. Use a piping bag to fill each cooled donut with custard.
  7. For the glaze, melt chocolate with cream and butter, stirring until smooth. Dip the tops of each donut.
  8. Let the glaze set and enjoy!

Notes:
Frying in batches helps maintain oil temperature.
Custard must be fully chilled before piping to prevent thinning.
Donuts are best enjoyed fresh on the same day.
