- Instructions:
- In a stand mixer, combine flour, yeast, sugar, salt, warm milk, eggs, and melted butter. Knead until smooth. Let rise 1–2 hours until doubled.
- Roll out dough to about ½-inch thickness, cut rounds, and rest for 30 minutes.
- Heat oil to 350°F and fry each donut 2 minutes per side until golden brown. Drain on a wire rack.
- For the custard, warm the milk, then whisk egg yolks, sugar, and cornstarch in a bowl. Temper with warm milk, return to heat, and stir until thick. Add vanilla and chill.
- Use a piping bag to fill each cooled donut with custard.
- For the glaze, melt chocolate with cream and butter, stirring until smooth. Dip the tops of each donut.
- Let the glaze set and enjoy!

Notes:
Frying in batches helps maintain oil temperature.
Custard must be fully chilled before piping to prevent thinning.
Donuts are best enjoyed fresh on the same day.
