- Instructions:
- Prepare the chilies by roasting or lightly charring them on a grill or stovetop until soft and blistered. Let cool and remove stems and most seeds for a smoother sauce.
- Add all ingredients into a medium saucepan over medium heat. Bring to a simmer and let cook for 10 minutes to blend flavors.
- Transfer the mixture to a blender or food processor. Blend until smooth. Add water gradually to reach your desired consistency.
- Strain the sauce through a fine mesh sieve for a thinner, smoother texture (optional).
- Cool and store in a sterilized bottle or jar. Refrigerate and use within 2 weeks for best flavor.

For more heat, keep some chili seeds or add extra cayenne. For sweetness, add more honey or a splash of pineapple juice. Shake well before each use as natural separation may occur.
