- Instructions:
- Make the Cookie Dough:
- In a large bowl, cream together butter, cream cheese, and sugar until fluffy. Add egg and vanilla. Mix well.
- In a separate bowl, whisk flour, baking powder, and salt. Gradually add dry ingredients to wet until a soft dough forms. Chill for 30 minutes.
- Prepare Jam Swirl:
- Mix jam with lemon juice for brightness. Set aside.
- Shape the Cookies:
- Scoop tablespoon-sized dough balls onto a lined baking tray. Press a thumbprint into each cookie center. Fill each with a small spoonful of jam.
- Bake:
- Bake at 350°F (175°C) for 12–14 minutes or until edges are golden. Let cool completely on a wire rack.
- Make the Buttercream:
- Beat butter until light. Gradually add powdered sugar. Mix in vanilla and cream until smooth. Add food coloring as desired. Pipe a swirl on top of each cooled cookie.
- Decorate:
- Sprinkle with edible glitter or sugar pearls to give that royal finish.

You can use any berry jam, but raspberry offers the best color contrast. Store in airtight containers for up to 4 days. For a crispier base, chill the dough longer before baking. Add a splash of almond extract to the buttercream for an extra layer of flavor.
