  • 2 pie crusts store-bought or homemade
  • 1 tbsp butter for dotting
  • 1 egg for egg wash or plant-based milk (for vegan option)

Method
 

  1. Instructions:
  2. Preheat oven to 375°F (190°C).
  3. Line a 9-inch pie dish with one crust.
  4. In a bowl, mix goumi berries, sugar, starch, lemon juice, zest, vanilla, and salt.
  5. Pour berry mixture into the crust and dot with butter.
  6. Cover with second crust or lattice; seal and crimp edges.
  7. Cut slits for steam if using full top crust.
  8. Brush top with egg wash or plant-based milk.
  9. Bake for 45-50 minutes until golden brown and bubbly.
  10. Let cool at least 2 hours before slicing to set.

Notes:
Use frozen berries directly; do not thaw.
Add ½ cup mixed berries for variety.
Cover crust edges with foil if browning too quickly.
