Method

  2. Preheat oven to 350°F (175°C). Grease and flour two 9-inch cake pans.
  3. In a medium bowl, whisk together flour, baking powder, and salt.
  4. In a large bowl, cream butter and sugar until light and fluffy.
  5. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  6. Alternately add flour mixture and milk to the creamed mixture, beginning and ending with the dry ingredients. Mix until just combined.
  7. Divide batter evenly between prepared pans and smooth the tops.
  8. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in pans for 10 minutes, then transfer to wire racks to cool completely.
  10. Frost and decorate as desired.

For best results, use room-temperature ingredients. Cake layers can be made a day ahead and stored in the fridge, wrapped tightly in plastic.
