  • 2 –3 tbsp marinara sauce low-sugar
  • ½ cup shredded mozzarella cheese
  • 6 –8 slices pepperoni or other toppings
  • Optional: olive oil for brushing

Method

  2. Preheat Oven: 300°F (150°C). Line a baking tray with parchment or silicone mat.
  3. Separate Eggs: Place yolks in one bowl, whites in another.
  4. Whip Egg Whites: Add cream of tartar and whip to stiff peaks using a mixer (3–5 mins).
  5. Mix Yolks & Cheese: To the yolks, add blended cottage cheese, garlic powder, Italian seasoning, salt & pepper. Mix until smooth.
  6. Fold Mixtures: Gently fold egg whites into yolk mixture in 3 parts using a spatula.
  7. Scoop & Shape: Spoon 6–8 mounds onto tray, flatten into 4” rounds.
  8. Bake: 25–30 mins until golden and springy.
  9. Cool Slightly: Let rest for 5 mins to firm up.
  10. Add Fillings: Spread marinara, top with cheese and pepperoni on each piece.
  11. Roll Up: Gently roll into pinwheels.
  12. Melt Cheese (Optional): Return to oven for 5 mins or pan-fry seam side down for crispness.
  13. Serve: Enjoy warm with dipping sauces.
