- Instructions:
- Preheat Oven: 300°F (150°C). Line a baking tray with parchment or silicone mat.
- Separate Eggs: Place yolks in one bowl, whites in another.
- Whip Egg Whites: Add cream of tartar and whip to stiff peaks using a mixer (3–5 mins).
- Mix Yolks & Cheese: To the yolks, add blended cottage cheese, garlic powder, Italian seasoning, salt & pepper. Mix until smooth.
- Fold Mixtures: Gently fold egg whites into yolk mixture in 3 parts using a spatula.
- Scoop & Shape: Spoon 6–8 mounds onto tray, flatten into 4” rounds.
- Bake: 25–30 mins until golden and springy.
- Cool Slightly: Let rest for 5 mins to firm up.
- Add Fillings: Spread marinara, top with cheese and pepperoni on each piece.
- Roll Up: Gently roll into pinwheels.
- Melt Cheese (Optional): Return to oven for 5 mins or pan-fry seam side down for crispness.
- Serve: Enjoy warm with dipping sauces.

For smoother texture, blend cottage cheese before mixing.

To reheat, use a toaster oven or skillet for best results.
Freeze after assembly and reheat from frozen in oven at 375°F for 10–12 mins.
