- Instructions:
- Trim the root base off enoki mushrooms, separate into small bundles, and pat dry.
- Lay a slice of beef flat on a board, place a mushroom bundle at one end, and roll tightly. Secure with a toothpick if needed.
- Heat oil in a skillet over medium heat.
- Place rolls seam-side down and cook, turning occasionally, until evenly browned (5–7 minutes).
- In a bowl, mix soy sauce, mirin, sesame oil, garlic, and sugar.
- Pour sauce into skillet, coat rolls, and let the glaze reduce slightly.
- Garnish with sesame seeds and green onions. Serve hot.

Substitute mirin with honey or maple syrup if unavailable.
