Method

  2. Trim the root base off enoki mushrooms, separate into small bundles, and pat dry.
  3. Lay a slice of beef flat on a board, place a mushroom bundle at one end, and roll tightly. Secure with a toothpick if needed.
  4. Heat oil in a skillet over medium heat.
  5. Place rolls seam-side down and cook, turning occasionally, until evenly browned (5–7 minutes).
  6. In a bowl, mix soy sauce, mirin, sesame oil, garlic, and sugar.
  7. Pour sauce into skillet, coat rolls, and let the glaze reduce slightly.
  8. Garnish with sesame seeds and green onions. Serve hot.

Use thin-sliced beef from Asian groceries for best results.
Substitute mirin with honey or maple syrup if unavailable.
Freeze beef slices for 15 minutes before cutting for easier handling.
