  • 8 small flour or corn tortillas

Method

  3. In a bowl, mix the olive oil, lime juice, chili powder, cumin, paprika, garlic, salt, and pepper. Add the chicken or steak slices. Let marinate for at least 15 minutes (or up to 24 hours in the fridge).

  5. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add marinated meat and cook for 5–7 minutes until browned and cooked through. Remove from skillet and set aside.

  7. In the same skillet, add sliced onions and bell peppers. Sauté for 7–10 minutes until soft and lightly charred.

  9. Return the cooked meat to the skillet with the veggies. Stir for 1–2 minutes to combine and warm through.
  10. Assemble the Tacos:
  11. Warm tortillas and fill each with a generous portion of fajita filling. Add your favorite toppings such as guacamole, salsa, sour cream, cheese, cilantro, and a squeeze of lime.
