Notes:
For extra richness, you can stir in ½ cup of chocolate chips or chopped walnuts.
For a vegan version, replace eggs with flax eggs (2 tbsp ground flax + 6 tbsp water).
Do not overbake! They continue to cook slightly after removing from the oven.
Use refined avocado oil for a more neutral flavor.
