- Instructions:
- Preheat your oven to 350°F (175°C). Grease or line an 8x8-inch baking pan with parchment paper.
- In a large mixing bowl, whisk together eggs, sugar, and vanilla extract until smooth and slightly pale.
- Slowly mix in the avocado oil until fully combined.
- In a separate bowl, sift together the flour, cocoa powder, salt, and baking powder.
- Gradually add the dry ingredients to the wet mixture. Stir until just combined—do not overmix.
- Pour the batter into the prepared baking pan and smooth the top.
- Bake in the preheated oven for 20–25 minutes, or until a toothpick inserted in the center comes out with moist crumbs.
- Let the brownies cool completely in the pan before slicing.

For extra richness, you can stir in ½ cup of chocolate chips or chopped walnuts. For a vegan version, replace eggs with flax eggs (2 tbsp ground flax + 6 tbsp water). Do not overbake! They continue to cook slightly after removing from the oven. Use refined avocado oil for a more neutral flavor.
