- Instructions:
- Place your gluten free cookies on a tray and let them cool completely if homemade.
- Allow the ice cream to soften at room temperature for 5–10 minutes.
- Scoop about 1/4 cup of ice cream onto the flat side of one cookie.
- Place another cookie on top and press gently to spread the ice cream evenly.
- If desired, roll the edges in sprinkles, chocolate chips, or nuts.
- Wrap each sandwich tightly in plastic wrap and place in an airtight container.
- Freeze for at least 1 hour to firm up before serving.
