  • 1 tbsp cornstarch
  • Salt and pepper
  • Oil for frying
  • For the Hotcakes:
  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup milk
  • 1 egg
  • 1 tbsp melted butter or oil
  • Optional: maple syrup and butter for topping

Method
 

  1. Instructions:
  2. Egg McMuffin
  3. Lightly oil a skillet and heat on medium.
  4. Use a metal ring mold to crack and cook each egg into a round shape. Cook until set.
  5. In a separate skillet, lightly brown the Canadian bacon or sausage patty.
  6. Toast the English muffins.
  7. Assemble: muffin base, meat, egg, cheese, muffin top. Wrap in foil and let sit for 2 minutes to melt the cheese.
  8. Hash Browns
  9. Soak grated potatoes in cold water, then squeeze out moisture.
  10. Mix with cornstarch, salt, and pepper.
  11. Form into small patties and fry on both sides in hot oil until golden and crispy.

  13. In a bowl, combine flour, sugar, baking powder, and salt.
  14. In another bowl, whisk together milk, egg, and butter.
  15. Mix wet into dry ingredients. Do not overmix.
  16. Pour 1/4 cup batter onto a lightly oiled griddle. Cook until bubbles form, flip, and cook the other side.
