  • 2 ripe mangoes peeled and chopped
  • 3 –4 habanero peppers seeds removed (or leave seeds for extra heat)
  • 1/2 cup apple cider vinegar
  • 1/4 cup honey or agave syrup
  • 1/4 cup fresh lime juice
  • 1/2 teaspoon salt
  • 2 cloves garlic peeled
  • 1/2 small onion chopped
  • 1 tablespoon olive oil
  • 1/4 cup water

Method

  2. In a medium saucepan, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté for 3–4 minutes until fragrant and softened.
  3. Transfer the sautéed onion and garlic to a blender. Add the chopped mango, habanero peppers, apple cider vinegar, lime juice, honey, salt, and water.
  4. Blend until completely smooth.
  5. Pour the mixture back into the saucepan. Bring to a low simmer and cook for 10–15 minutes to meld the flavors and thicken the sauce slightly.
  6. Taste and adjust seasoning if needed, adding more lime juice for acidity, honey for sweetness, or water to thin.
  7. Let the sauce cool, then pour it into a clean glass jar. Store in the refrigerator for up to 3 weeks.

Notes

Notes:
For less heat, remove the seeds and membranes from all the habaneros.
If you want a smokier flavor, roast the habaneros before blending.
Frozen mango can be used; thaw before blending.
The sauce may thicken in the fridge; stir before using.
