- Instructions:
- Marinate chicken in buttermilk, salt, pepper, and smoked paprika for at least 4 hours (preferably overnight).
- In a bowl, mix flour with garlic powder, onion powder, cayenne pepper, and a pinch of salt.
- Heat oil in a deep fryer or heavy pot to 350°F (175°C).
- Dredge each chicken piece in the seasoned flour until fully coated.
- Fry in small batches for about 12–15 minutes until golden brown and internal temperature reaches 165°F (74°C).
- Place fried chicken on a wire rack to drain, and let rest for 5 minutes before serving.

Notes:
For even crispier chicken, double-dip in the flour after a quick buttermilk dunk.
Spice levels can be adjusted to taste.
