- Instructions:
- Preheat oven to 375°F (190°C).
- In a large bowl, combine goumi berries, sugar, cornstarch, lemon juice, zest, and vanilla. Let sit for 10–15 minutes.
- Roll out the bottom crust into a 9-inch pie pan.
- Pour the berry mixture into the crust and dot with butter if using.
- Cover with the top crust (full or lattice), crimp the edges, and brush with egg wash.
- Bake for 45–55 minutes until golden and bubbling.
- Cool for at least 2 hours before serving.
