- Instructions:
- Toast the English muffin until golden brown. Set aside.
- In a small bowl, beat the egg with a pinch of salt.
- Heat a skillet with butter or oil. Pour in egg and fold gently until cooked.
- Heat the spicy chicken filet in a skillet or microwave (if pre-cooked).
- Layer the bottom of the muffin with the chicken filet, followed by the folded egg and cheese.
- Place the top muffin on and serve hot. Add sauce if desired.

You can substitute the spicy filet with grilled or regular chicken if preferred.
Add a hash brown patty inside for a crunchier version.
Great with a side of fruit, Greek yogurt, or hash browns.
