  • 1 lb fresh strawberries hulled and sliced
  • 1 cup freshly squeezed lemon juice 6–8 lemons
  • ¾ to 1 cup sugar or honey/agave syrup
  • 1 cup water for simple syrup
  • 3 –4 cups cold water for dilution
  • Ice cubes for serving
  • Optional: Mint leaves lemon slices, sparkling water

Method
 

  1. Instructions:
  2. Prepare simple syrup by heating 1 cup of water with sugar in a saucepan until dissolved. Cool completely.
  3. Blend strawberries until smooth. Strain through a mesh sieve to remove seeds.
  4. Juice the lemons and strain to remove seeds and excess pulp.
  5. In a pitcher, combine strawberry puree, lemon juice, and cooled syrup. Stir well.
  6. Add 3–4 cups of cold water to adjust strength. Taste and adjust sweetness as needed.
  7. Chill for at least 1 hour. Serve over ice with mint and lemon slices.

Notes

Notes:
You can use frozen strawberries (thawed) when fresh aren’t available.
Adjust sugar depending on how sweet your strawberries are.
For a fizzy version, replace part of the water with sparkling water.
Store leftovers in the refrigerator for up to 5 days.
